Description
A simple and healthy dip made with roasted peppers, perfect for snacks or appetizers.
Ingredients
- 2 large red bell peppers
- 1 tablespoon olive oil
- 1 clove garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup Greek yogurt
- 1 teaspoon lemon juice
- 1/2 teaspoon smoked paprika
Instructions
- Preheat oven to 400°F (200°C).
- Cut bell peppers in half, remove seeds, and place on a baking sheet.
- Drizzle with olive oil and roast for 25 minutes until skin blisters.
- Let peppers cool, then peel off the skin.
- Blend peppers with garlic, salt, black pepper, yogurt, lemon juice, and smoked paprika until smooth.
- Serve chilled or at room temperature.

- Store in an airtight container for up to 3 days.
