Ingredients
- 1 lb spicy chorizo, sliced
- 2 cups pumpkin puree
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 tsp smoked paprika
- 1/2 tsp cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and garlic, sauté until softened.
- Add chorizo and cook until browned.
- Stir in pumpkin puree, chicken broth, smoked paprika, cumin, salt, and pepper.
