Ingredients
- 2 chicken breasts
- 4 cups chicken broth
- 1 tbsp chili paste
- 1 tbsp soy sauce
- 1 tsp ginger
- 2 garlic cloves
- 1 cup coconut milk
- 200g ramen noodles
- 2 eggs
- 1 cup spinach
- 1 tbsp sesame oil
Instructions
- Boil chicken in broth for 15 minutes
- Shred cooked chicken
- Add chili paste, soy sauce, ginger, and garlic to broth
- Simmer for 5 minutes
- Stir in coconut milk
- Cook noodles separately
- Boil eggs for 6 minutes
- Assemble bowls with noodles, broth, chicken, spinach, and eggs
- Drizzle with sesame oil
