Description

A healthy twist on classic cornbread with a spicy kick from jalapeños and a sweet drizzle of lime-infused honey.


Ingredients

  • 1 cup cornmeal
  • 1 cup whole wheat flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup low-fat milk
  • 1/4 cup honey
  • 1 egg
  • 2 tbsp olive oil
  • 2 jalapeños, finely chopped
  • 1 lime, juiced and zested
  • 1 tbsp honey (for drizzle)


Instructions

  1. Preheat oven to 375°F (190°C). Grease a baking pan.
  2. Mix cornmeal, flour, baking powder, and salt in a bowl.
  3. In another bowl, whisk milk, honey, egg, and olive oil.
  4. Combine wet and dry ingredients. Fold in jalapeños.
  5. Pour batter into the pan. Bake for 20-25 minutes.
  6. Mix lime juice, zest, and honey for the drizzle.
  7. Drizzle over warm cornbread before serving.
