A healthy twist on classic cornbread with a spicy kick from jalapeños and a sweet drizzle of lime-infused honey.
Ingredients
- 1 cup cornmeal
- 1 cup whole wheat flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 cup low-fat milk
- 1/4 cup honey
- 1 egg
- 2 tbsp olive oil
- 2 jalapeños, finely chopped
- 1 lime, juiced and zested
- 1 tbsp honey (for drizzle)
Instructions
- Preheat oven to 375°F (190°C). Grease a baking pan.
- Mix cornmeal, flour, baking powder, and salt in a bowl.
- In another bowl, whisk milk, honey, egg, and olive oil.
- Combine wet and dry ingredients. Fold in jalapeños.
- Pour batter into the pan. Bake for 20-25 minutes.
- Mix lime juice, zest, and honey for the drizzle.
- Drizzle over warm cornbread before serving.
