Ingredients
- 2 large sweet potatoes, peeled and cubed
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon salt
- 1 lime, juiced
- Fresh cilantro for garnish
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, toss sweet potato cubes with olive oil.
- Mix chili powder, cumin, paprika, cayenne, and salt in a small bowl.
- Sprinkle spice mix over sweet potatoes and toss to coat evenly.
- Spread potatoes on a baking sheet in a single layer.
- Roast for 25-30 minutes until tender and slightly crispy.
- Remove from oven and drizzle with lime juice.
- Garnish with fresh cilantro before serving.
