Ingredients
- 6 large eggs
- 1/4 cup cottage cheese
- 1/4 cup shredded cheddar cheese
- 1/4 cup diced bell peppers
- 1/4 cup diced onions
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
Instructions
- Preheat your oven to 300°F (150°C).
- Blend eggs, cottage cheese, salt, pepper, and garlic powder in a blender until smooth.
- Stir in shredded cheddar cheese, bell peppers, and onions.
- Pour the mixture into a greased muffin tin, filling each cup 3/4 full.
- Bake for 20-25 minutes until the egg bites are set.
- Let cool for 5 minutes before removing from the tin.
Notes
- Store leftovers in an airtight container in the fridge for up to 3 days.
- Reheat in the microwave for 30-45 seconds before serving.
