Ingredients

  • 2 cups cooked chicken, shredded
  • 2 cups corn kernels
  • 1/2 cup Greek yogurt
  • 1/4 cup mayonnaise
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/4 cup cilantro, chopped
  • 1/4 cup cotija cheese, crumbled
  • 1 lime, juiced
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 375°F.
  2. Mix chicken, corn, Greek yogurt, mayonnaise, chili powder, cumin, cilantro, lime juice, salt, and pepper in a bowl.
  3. Transfer mixture to a baking dish.
  4. Sprinkle cotija cheese on top.
