Ingredients
- 1 cup cooked brown rice
- 1 grilled chicken breast, sliced
- 1/2 cup corn kernels, grilled
- 1/4 cup chopped red onion
- 1/4 cup chopped cilantro
- 1/4 cup crumbled feta cheese
- 1 lime, cut into wedges
- 1 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp paprika
- Salt and pepper to taste
Instructions
- Cook brown rice according to package instructions.
- Season chicken breast with salt, pepper, and paprika. Grill until fully cooked, then slice.
- Grill corn kernels in olive oil with chili powder for 2-3 minutes.
- Assemble bowl: rice, sliced chicken, grilled corn, red onion, and cilantro.
- Top with feta cheese and serve with lime wedges.
