Ingredients
- 2 medium sweet potatoes
- 1 cup cooked chicken, shredded
- 1 cup corn kernels (fresh or frozen)
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1 tbsp lime juice
- 1 tsp chili powder
- 1/2 tsp garlic powder
- 1/4 tsp cayenne pepper
- 1 tbsp honey
- 1/4 cup crumbled feta cheese
- 2 tbsp chopped cilantro
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Pierce sweet potatoes and bake for 45-50 minutes until tender.
- In a bowl, mix chicken, corn, mayonnaise, sour cream, lime juice, chili powder, garlic powder, cayenne pepper, salt, and pepper.
- Cut open the baked sweet potatoes and stuff with the chicken-corn mixture.
- Drizzle with honey and sprinkle feta cheese and cilantro.
- Serve warm.
