A healthy and flavorful dip made with stuffed mushrooms, perfect for parties or snacks.


Ingredients

  • 20 large mushrooms, stems removed and finely chopped
  • 1 cup Greek yogurt
  • 1/2 cup shredded low-fat mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 1/4 tsp salt


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a pan and sauté chopped mushroom stems and garlic for 3-4 minutes.
  3. In a bowl, mix Greek yogurt, mozzarella, Parmesan, oregano, black pepper, salt, and sautéed mushroom mixture.
  4. Spoon the filling into mushroom caps.
  5. Place stuffed mushrooms on a baking sheet and bake for 15 minutes.
  6. Serve warm as a dip with whole-grain crackers or vegetable sticks.
