Ingredients

  • 4 small whole wheat bread bowls
  • 1 lb mixed seafood (shrimp, scallops, crab meat)
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 cup spinach, chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp paprika
  • 1/4 cup low-fat cream cheese
  • 1/4 cup grated Parmesan cheese


Instructions

  1. Preheat oven to 375°F.
  2. Cut the tops off the bread bowls and hollow out the center, leaving a 1-inch border.
  3. Heat olive oil in a pan over medium heat. Add onion, garlic, and bell pepper. Cook for 3 minutes.
  4. Add seafood and cook until just done, about 5 minutes.
  5. Stir in spinach, salt, black pepper, and paprika. Remove from heat.
