Ingredients
- 4 small whole wheat bread bowls
- 1 lb mixed seafood (shrimp, scallops, crab meat)
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 cup spinach, chopped
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp paprika
- 1/4 cup low-fat cream cheese
- 1/4 cup grated Parmesan cheese
Instructions
- Preheat oven to 375°F.
- Cut the tops off the bread bowls and hollow out the center, leaving a 1-inch border.
- Heat olive oil in a pan over medium heat. Add onion, garlic, and bell pepper. Cook for 3 minutes.
- Add seafood and cook until just done, about 5 minutes.
- Stir in spinach, salt, black pepper, and paprika. Remove from heat.
- Mix in cream cheese and Parmesan until well combined.
- Spoon the seafood mixture into the bread bowls.
- Bake for 10 minutes until the bread is crispy and the filling is heated through.
- Serve warm.
