A nutritious and flavorful bowl featuring roasted sweet potatoes, black beans, and a creamy avocado lime dressing.
Ingredients
- 2 medium sweet potatoes, peeled and cubed
- 1 can (15 oz) black beans, rinsed and drained
- 1 avocado, peeled and pitted
- 2 tbsp fresh lime juice
- 2 tbsp olive oil
- 1 clove garlic, minced
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 cup chopped cilantro (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Toss the sweet potato cubes with 1 tbsp olive oil, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes, until tender.
- In a blender or food processor, combine the avocado, lime juice, 1 tbsp olive oil, garlic, and a pinch of salt. Blend until smooth.
- Assemble the bowls by dividing the roasted sweet potatoes and black beans between two bowls.
- Drizzle the avocado lime dressing over the bowls and garnish with cilantro if desired.
Notes
- You can add cooked quinoa or brown rice for extra texture.
- Store leftovers in an airtight container in the fridge for up to 2 days.
