Ingredients
- 2 medium sweet potatoes, peeled and diced
- 1 can (15 oz) black beans, drained and rinsed
- 1 onion, diced
- 2 garlic cloves, minced
- 1 bell pepper, diced
- 1 can (14.5 oz) diced tomatoes
- 2 cups vegetable broth
- 1 tbsp olive oil
- 1 tbsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until soft.
- Add bell pepper and sweet potatoes, cook for 5 minutes.
- Stir in chili powder, cumin, and paprika.
- Add diced tomatoes, black beans, and vegetable broth.
- Bring to a boil, then reduce heat and simmer for 20-25 minutes until sweet potatoes are tender.
- Season with salt and pepper.
- Serve hot.
