Description

A nutritious and flavorful bowl combining sweet potatoes, cauliflower, and lentils for a balanced meal.


Ingredients

  • 1 cup cooked lentils
  • 1 medium sweet potato, diced
  • 1 cup cauliflower florets
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp cumin
  • 1/4 tsp paprika
  • 1 tbsp lemon juice
  • 2 tbsp chopped fresh parsley


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss sweet potato and cauliflower with olive oil, salt, pepper, cumin, and paprika.
  3. Spread on a baking sheet and roast for 25 minutes.
  4. Mix roasted vegetables with cooked lentils.
  5. Drizzle with lemon juice and garnish with parsley.
