Ingredients
- 1 cup cooked lentils
- 1 medium sweet potato, diced
- 1 cup cauliflower florets
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp cumin
- 1/4 tsp paprika
- 1 tbsp lemon juice
- 2 tbsp chopped fresh parsley
Instructions
- Preheat oven to 400°F (200°C).
- Toss sweet potato and cauliflower with olive oil, salt, pepper, cumin, and paprika.
- Spread on a baking sheet and roast for 25 minutes.
- Mix roasted vegetables with cooked lentils.
- Drizzle with lemon juice and garnish with parsley.
