Description

A warm and nutritious soup combining sweet potatoes and fresh ginger for a flavorful and healthy meal.


Ingredients

  • 2 large sweet potatoes, peeled and diced
  • 1 tbsp fresh ginger, grated
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup coconut milk (optional)


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until softened.
  3. Stir in ginger and cook for 1 minute.
  4. Add sweet potatoes and vegetable broth.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Blend until smooth using an immersion blender.
  7. Stir in coconut milk if using.
  8. Season with salt and pepper.
  9. Serve warm.
