Ingredients

  • 2 medium sweet potatoes, diced
  • 2 cups kale, chopped
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp lemon juice
  • 1/4 cup walnuts, chopped
  • 1 tbsp honey


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss sweet potatoes with olive oil, salt, and pepper.
  3. Roast for 25 minutes until tender.
  4. In a pan, sauté kale for 3-4 minutes until wilted.
  5. Mix roasted sweet potatoes, kale, walnuts, honey, and lemon juice.
