A nutritious and flavorful salad combining roasted sweet potatoes and crunchy pecans.


Ingredients

  • 2 medium sweet potatoes, peeled and cubed
  • 1 cup pecans, roughly chopped
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp maple syrup
  • 4 cups mixed greens
  • 1/4 cup crumbled feta cheese (optional)


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss sweet potatoes with olive oil, salt, and pepper.
  3. Roast for 25 minutes until tender.
  4. Toast pecans in a dry pan for 3-4 minutes.
  5. Drizzle maple syrup over pecans and stir.
  6. Combine roasted sweet potatoes, pecans, and mixed greens.
  7. Top with feta cheese if desired.

Notes

  • Store leftovers in an airtight container for up to 2 days.
  • For a vegan version, omit the feta cheese.
