A nutritious and flavorful salad combining roasted sweet potatoes and crunchy pecans.
Ingredients
- 2 medium sweet potatoes, peeled and cubed
- 1 cup pecans, roughly chopped
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp maple syrup
- 4 cups mixed greens
- 1/4 cup crumbled feta cheese (optional)
Instructions
- Preheat oven to 400°F (200°C).
- Toss sweet potatoes with olive oil, salt, and pepper.
- Roast for 25 minutes until tender.
- Toast pecans in a dry pan for 3-4 minutes.
- Drizzle maple syrup over pecans and stir.
- Combine roasted sweet potatoes, pecans, and mixed greens.
- Top with feta cheese if desired.
Notes
- Store leftovers in an airtight container for up to 2 days.
- For a vegan version, omit the feta cheese.
- Add grilled chicken for extra protein.
