A nutritious and protein-packed bread made with sweet potatoes, perfect for a healthy snack or breakfast.
Ingredients
- 1 cup mashed sweet potato
- 2 cups oat flour
- 1 scoop vanilla protein powder
- 2 eggs
- 1/4 cup almond milk
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1 tbsp honey
- 1/4 tsp salt
Instructions
- Preheat oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, mix mashed sweet potato, eggs, almond milk, and honey.
- Add oat flour, protein powder, baking powder, cinnamon, and salt. Stir until combined.
- Pour batter into the loaf pan and smooth the top.
- Bake for 40-45 minutes or until a toothpick comes out clean.
- Let cool before slicing.
Notes
- Store in an airtight container for up to 3 days.
- For a vegan version, replace eggs with flax eggs.
- Adjust sweetness by adding more honey if needed.
