Description

A nutritious and protein-packed bread made with sweet potatoes, perfect for a healthy snack or breakfast.


Ingredients

  • 1 cup mashed sweet potato
  • 2 cups oat flour
  • 1 scoop vanilla protein powder
  • 2 eggs
  • 1/4 cup almond milk
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1 tbsp honey
  • 1/4 tsp salt


Instructions

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, mix mashed sweet potato, eggs, almond milk, and honey.
  3. Add oat flour, protein powder, baking powder, cinnamon, and salt. Stir until combined.
  4. Pour batter into the loaf pan and smooth the top.
  5. Bake for 40-45 minutes or until a toothpick comes out clean.
  6. Let cool before slicing.

Notes

  • Store in an airtight container for up to 3 days.
  • For a vegan version, replace eggs with flax eggs.
