Description

Ingredients

  • 2 large sweet potatoes, peeled and diced
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 tbsp fresh sage, chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup coconut milk (optional)


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and cook until soft, about 5 minutes.
  3. Add garlic and sage, cook for 1 minute until fragrant.
  4. Add sweet potatoes and vegetable broth. Bring to a boil.
  5. Reduce heat, cover, and simmer for 20 minutes or until sweet potatoes are tender.
  6. Use an immersion blender to puree the soup until smooth.
  7. Stir in coconut milk if using. Season with salt and pepper.
  8. Serve warm.
