Description
A warm and comforting soup made with sweet potatoes and fresh sage, perfect for a healthy meal.
Ingredients
- 2 large sweet potatoes, peeled and diced
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 tbsp fresh sage, chopped
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup coconut milk (optional)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and cook until soft, about 5 minutes.
- Add garlic and sage, cook for 1 minute until fragrant.
- Add sweet potatoes and vegetable broth. Bring to a boil.
- Reduce heat, cover, and simmer for 20 minutes or until sweet potatoes are tender.
- Use an immersion blender to puree the soup until smooth.
- Stir in coconut milk if using. Season with salt and pepper.
- Serve warm.
Notes
- Use homemade vegetable broth for better flavor.
- Add a pinch of nutmeg for extra warmth.
- Store leftovers in the fridge for up to 3 days.
