Ingredients
- 2 cups mashed sweet potatoes
- 2 cups whole wheat flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp cloves
- 2 eggs
- 1/2 cup honey
- 1/4 cup olive oil
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9×5 inch loaf pan.
- Mix dry ingredients: flour, baking soda, cinnamon, nutmeg, and cloves in a bowl.
- In another bowl, beat eggs and combine with mashed sweet potatoes, honey, oil, and vanilla.
- Fold wet ingredients into dry ingredients until just combined.
- Pour batter into the prepared pan.
- Bake for 50-60 minutes or until a toothpick inserted comes out clean.
- Cool in pan for 10 minutes, then transfer to a wire rack.
Notes
- Use ripe sweet potatoes for best flavor.
- Store leftovers in an airtight container for up to 3 days.
