Ingredients

  • 2 cups mashed sweet potatoes
  • 2 cups whole wheat flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp cloves
  • 2 eggs
  • 1/2 cup honey
  • 1/4 cup olive oil
  • 1 tsp vanilla extract


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×5 inch loaf pan.
  3. Mix dry ingredients: flour, baking soda, cinnamon, nutmeg, and cloves in a bowl.
  4. In another bowl, beat eggs and combine with mashed sweet potatoes, honey, oil, and vanilla.
  5. Fold wet ingredients into dry ingredients until just combined.
  6. Pour batter into the prepared pan.
  7. Bake for 50-60 minutes or until a toothpick inserted comes out clean.
  8. Cool in pan for 10 minutes, then transfer to a wire rack.
