Ingredients
- 2 medium sweet potatoes, diced
- 1 cup walnuts, chopped
- 4 cups mixed greens
- 1/4 cup olive oil
- 2 tbsp balsamic vinegar
- 1 tsp honey
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 400°F (200°C).
- Toss sweet potatoes with 1 tbsp olive oil, salt, and pepper. Roast for 25 minutes.
- Toast walnuts in a dry pan over medium heat for 5 minutes.
- Whisk remaining olive oil, balsamic vinegar, and honey for the dressing.
- Combine roasted sweet potatoes, walnuts, and mixed greens in a bowl.
- Drizzle with dressing and toss gently before serving.
