Description

A healthy taco casserole made in the crockpot with lean protein, fresh vegetables, and flavorful spices.


Ingredients

  • 1 lb lean ground turkey
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 cup shredded cheese
  • 1 cup salsa
  • 1 cup tortilla chips, crushed


Instructions

  1. Brown the ground turkey in a skillet.
  2. Add turkey, black beans, corn, bell pepper, onion, garlic, and taco seasoning to the crockpot.
  3. Pour salsa over the mixture and stir well.
  4. Cook on low for 4 hours.
  5. Sprinkle shredded cheese and crushed tortilla chips on top.
