A healthier twist on classic lasagna using Doritos crust and taco flavors.


Ingredients

  • 1 bag Doritos (Nacho Cheese)
  • 1 lb ground turkey
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1 cup black beans (rinsed)
  • 1 cup corn
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup Greek yogurt (or sour cream)
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced black olives
  • 1/4 cup chopped cilantro


Instructions

  1. Preheat oven to 375°F.
  2. Crush Doritos and layer them at the bottom of a baking dish.
  3. Cook ground turkey with taco seasoning.
  4. Spread cooked turkey over Doritos layer.
  5. Add black beans, corn, and salsa.
  6. Sprinkle shredded cheese.
  7. Bake for 20 minutes.
  8. Top with Greek yogurt, diced tomatoes, black olives, and cilantro.
