A healthier twist on classic lasagna using Doritos crust and taco flavors.
Ingredients
- 1 bag Doritos (Nacho Cheese)
- 1 lb ground turkey
- 1 packet taco seasoning
- 1 cup salsa
- 1 cup black beans (rinsed)
- 1 cup corn
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup Greek yogurt (or sour cream)
- 1/2 cup diced tomatoes
- 1/4 cup sliced black olives
- 1/4 cup chopped cilantro
Instructions
- Preheat oven to 375°F.
- Crush Doritos and layer them at the bottom of a baking dish.
- Cook ground turkey with taco seasoning.
- Spread cooked turkey over Doritos layer.
- Add black beans, corn, and salsa.
- Sprinkle shredded cheese.
- Bake for 20 minutes.
- Top with Greek yogurt, diced tomatoes, black olives, and cilantro.
Notes
- Use low-fat cheese for fewer calories.
- Replace Doritos with baked tortilla chips for a lighter option.
- Add jalapeños for extra spice.
