Ingredients
- 1 lb lean ground turkey
- 1 tbsp olive oil
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 can black beans, drained
- 1 can diced tomatoes
- 1 cup corn kernels
- 2 tbsp taco seasoning
- 1 cup shredded cheese
- Fresh cilantro for garnish
Instructions
- Heat oil in a large skillet over medium heat.
- Add turkey and cook until browned.
- Stir in onion, pepper, and garlic. Cook for 3 minutes.
- Mix in beans, tomatoes, corn, and seasoning. Simmer for 5 minutes.
- Sprinkle cheese on top and cover until melted.
- Garnish with cilantro before serving.
