Ingredients

  • 1 lb lean ground turkey
  • 1 cup chopped carrots
  • 1 cup chopped zucchini
  • 1/2 cup chopped onions
  • 1/2 cup chopped bell peppers
  • 2 cups frozen tater tots
  • 1 cup reduced-fat cheddar cheese
  • 1/2 cup low-sodium chicken broth
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • 1/2 tsp salt


Instructions

  1. Preheat oven to 375°F.
  2. Brown turkey in a skillet over medium heat.
  3. Add carrots, zucchini, onions, and bell peppers. Cook for 5 minutes.
  4. Stir in garlic powder, paprika, black pepper, and salt.
  5. Pour chicken broth into the skillet and simmer for 3 minutes.
