Ingredients

  • 12 lasagna noodles
  • 1 lb lean ground turkey
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 (24 oz) jar marinara sauce
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 (15 oz) container part-skim ricotta cheese
  • 1 egg
  • 2 cups shredded part-skim mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cups chopped spinach


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook lasagna noodles according to package directions. Drain and set aside.
  3. In a large skillet, brown turkey, onion, and garlic over medium heat. Drain excess fat.
  4. Stir in marinara sauce, oregano, basil, salt, and pepper. Simmer for 5 minutes.
  5. In a bowl, mix ricotta cheese, egg, and spinach.
  6. Spread 1/3 of the meat sauce in a 9×13-inch baking dish. Layer with 4 noodles, half the ricotta mixture, and 1/3 of the mozzarella.
  7. Repeat layers, ending with meat sauce and remaining mozzarella. Sprinkle Parmesan on top.
  8. Cover with foil and bake for 25 minutes. Uncover and bake for another 15 minutes.
  9. Let stand for 10 minutes before serving.

Notes

  • Use whole wheat lasagna noodles for extra fiber.
  • Substitute ground turkey with ground chicken or beef if preferred.
  • Add more vegetables like zucchini or mushrooms for extra nutrition.
