A hearty and healthy French garlic soup, perfect for Thanksgiving. This soup is packed with flavor and simple ingredients.
Ingredients
- 2 tablespoons olive oil
- 1 large onion, chopped
- 8 cloves garlic, minced
- 4 cups vegetable broth
- 2 cups water
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 bay leaf
- Salt and pepper to taste
- 4 slices whole grain bread, toasted
- 1/2 cup grated Parmesan cheese
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and sauté until soft, about 5 minutes.
- Add minced garlic and cook for 1 minute until fragrant.
- Pour in vegetable broth and water.
- Add thyme, rosemary, bay leaf, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Remove the bay leaf.
- Toast the whole grain bread.
- Ladle the soup into bowls, top with toasted bread and Parmesan cheese.
- Serve hot.
