Ingredients

  • 6 large eggs
  • 1 cup milk
  • 1 cup shredded cheese
  • 2 cups diced vegetables (bell peppers, onions, mushrooms)
  • 1 cup cooked turkey or chicken (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil


Instructions

  1. Preheat oven to 375°F (190°C)
  2. Grease a baking dish with olive oil
  3. Layer vegetables and meat in the dish
  4. Whisk eggs, milk, salt and pepper together
  5. Pour egg mixture over vegetables
  6. Sprinkle cheese on top
  7. Bake for 35-40 minutes until set
  8. Let cool for 5 minutes before serving
