Description

A healthy twist on classic lasagna using ravioli and cooked in a crockpot for convenience.


Ingredients

  • 1 (25 oz) package frozen cheese ravioli
  • 1 (24 oz) jar marinara sauce
  • 1 (15 oz) container part-skim ricotta cheese
  • 1 cup shredded part-skim mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 1 tsp dried basil
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper


Instructions

  1. In a bowl, mix ricotta, egg, basil, garlic powder, and black pepper.
  2. Spread 1/3 of the marinara sauce on the bottom of the crockpot.
  3. Layer half the ravioli over the sauce.
  4. Spread half the ricotta mixture over the ravioli.
  5. Sprinkle with 1/3 cup mozzarella and 2 tbsp Parmesan.
  6. Repeat layers: sauce, ravioli, ricotta, cheeses.
  7. Top with remaining sauce and cheeses.
  8. Cover and cook on low for 4-5 hours.

Notes

  • Use whole wheat ravioli for extra fiber.
  • Add spinach or mushrooms for more vegetables.
  • Let it rest 10 minutes before serving.
