Ingredients
- 1 lb fresh green beans, trimmed
- 1 cup whole wheat breadcrumbs
- 1/2 cup low-sodium vegetable broth
- 1/4 cup almond milk
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp dried thyme
- 1/2 tsp black pepper
- 1/4 tsp salt
Instructions
- Preheat oven to 375°F.
- Heat olive oil in a pan over medium heat. Sauté onion and garlic until soft.
- Add green beans, thyme, salt, and pepper. Cook for 5 minutes.
- Transfer green beans to a baking dish.
- Pour vegetable broth and almond milk over the green beans.
- Sprinkle breadcrumbs evenly on top.
- Bake for 20-25 minutes until golden brown.
Notes
- Use gluten-free breadcrumbs if needed.
- Fresh thyme can replace dried thyme.
- Store leftovers in an airtight container for up to 3 days.
