A delicious and healthy twist on roasted potatoes for Thanksgiving, featuring honey-glazed bacon for added flavor.
Ingredients
- 2 lbs baby potatoes, halved
- 6 slices bacon, chopped
- 2 tbsp honey
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Salt and pepper to taste
- 2 tbsp fresh parsley, chopped
Instructions
- Preheat oven to 400°F (200°C).
- Toss potatoes with olive oil, garlic powder, smoked paprika, salt, and pepper.
- Spread potatoes on a baking sheet in a single layer.
- Bake for 20 minutes.
- Meanwhile, cook bacon in a skillet until crispy.
- Drain bacon and toss with honey.
- Remove potatoes from oven, add honey-glazed bacon, and mix.
- Return to oven for 10 more minutes.
- Garnish with fresh parsley before serving.
Notes
- Use thick-cut bacon for better texture.
- Adjust honey to taste.
- For crispier potatoes, broil for 2-3 minutes at the end.
