Ingredients
- 2 cups mixed vegetables (sweet potatoes, Brussels sprouts, carrots)
- 1 can (15 oz) chickpeas, drained and rinsed
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 2 tbsp maple syrup
- 1 tbsp Dijon mustard
- 2 tbsp tahini
- 1 tbsp lemon juice
- 2 tbsp water
Instructions
- Preheat oven to 400°F.
- Toss vegetables and chickpeas with olive oil, salt, pepper, garlic powder, and smoked paprika.
- Spread on a baking sheet and roast for 25-30 minutes until tender.
- Whisk together maple syrup, Dijon mustard, tahini, lemon juice, and water for the dressing.
- Divide roasted veggies and chickpeas into bowls.
- Drizzle with dressing and serve.
