Ingredients

  • 2 cups mixed vegetables (sweet potatoes, Brussels sprouts, carrots)
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 2 tbsp maple syrup
  • 1 tbsp Dijon mustard
  • 2 tbsp tahini
  • 1 tbsp lemon juice
  • 2 tbsp water


Instructions

  1. Preheat oven to 400°F.
  2. Toss vegetables and chickpeas with olive oil, salt, pepper, garlic powder, and smoked paprika.
  3. Spread on a baking sheet and roast for 25-30 minutes until tender.
  4. Whisk together maple syrup, Dijon mustard, tahini, lemon juice, and water for the dressing.
  5. Divide roasted veggies and chickpeas into bowls.
  6. Drizzle with dressing and serve.
