A simple and healthy side dish featuring roasted potatoes with truffle oil and fresh herbs.
Ingredients
- 1.5 lbs baby potatoes, halved
- 2 tbsp truffle oil
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cloves garlic, minced
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme, chopped
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss potatoes with truffle oil, olive oil, salt, black pepper, and minced garlic.
- Spread potatoes evenly on a baking sheet.
- Roast for 30-35 minutes until golden and crispy.
- Sprinkle fresh rosemary and thyme over potatoes before serving.
Notes
- Use baby potatoes for best texture.
- Truffle oil adds rich flavor but can be omitted if unavailable.
- Fresh herbs work better than dried for this recipe.
