Ingredients
- 1 lb turkey sausage, casings removed
- 2 cups chopped bell peppers
- 1 cup diced onions
- 2 cups chopped zucchini
- 1 cup sliced mushrooms
- 2 cloves garlic, minced
- 1 tsp olive oil
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup low-fat shredded cheese (optional)
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat.
- Add turkey sausage and cook until browned, breaking it into small pieces.
- Add onions, bell peppers, zucchini, mushrooms, and garlic. Sauté for 5-7 minutes.
- Season with oregano, salt, and black pepper.
- Transfer the mixture to a baking dish.
- Sprinkle shredded cheese on top if desired.
- Bake for 20-25 minutes until bubbly and golden.
- Let cool for 5 minutes before serving.
