Description

A simple and nutritious Tuscan-inspired white bean salad with sun-dried tomatoes, fresh herbs, and a light dressing.


Ingredients

  • 2 cans (15 oz each) cannellini beans, drained and rinsed
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/4 cup red onion, finely diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 2 tbsp extra-virgin olive oil
  • 1 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 clove garlic, minced


Instructions

  1. In a large bowl, combine beans, sun-dried tomatoes, red onion, parsley, and basil.
  2. In a small bowl, whisk together olive oil, lemon juice, salt, pepper, and garlic.
  3. Pour the dressing over the bean mixture and toss gently to coat.
  4. Let the salad sit for 10 minutes before serving to allow flavors to blend.

Notes

  • Substitute cannellini beans with great northern beans if needed.
