Description
A light and refreshing chicken salad with tzatziki sauce, perfect for a healthy meal or snack.
Ingredients
- 2 cups cooked chicken, shredded
- 1 cup Greek yogurt
- 1 cucumber, grated and drained
- 1 tbsp lemon juice
- 2 cloves garlic, minced
- 1 tbsp fresh dill, chopped
- 1 tsp olive oil
- Salt and pepper to taste
- 1/4 cup red onion, finely chopped
Instructions
- In a bowl, mix Greek yogurt, grated cucumber, lemon juice, garlic, dill, olive oil, salt, and pepper to make the tzatziki sauce.
- Add shredded chicken and red onion to the bowl.
- Toss everything together until well combined.
- Chill for at least 30 minutes before serving.
- Serve with pita bread or a bed of greens.
Notes
- Drain the cucumber well to avoid a watery sauce.
- Use leftover or rotisserie chicken for convenience.
- Adjust garlic and dill to taste.
