Ingredients
- 2 cups mixed winter greens (kale, spinach, arugula)
- 1/2 cup roasted butternut squash, cubed
- 1/4 cup pomegranate seeds
- 1/4 cup crumbled feta cheese
- 1/4 cup chopped walnuts
- 1/4 cup dried cranberries
- 1 tbsp olive oil
- 1 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions
- Wash and dry the mixed winter greens thoroughly.
- Toss the greens with olive oil, balsamic vinegar, salt, and pepper.
- Add roasted butternut squash, pomegranate seeds, feta cheese, walnuts, and dried cranberries.
- Gently mix all ingredients.
- Serve immediately.

- For extra protein, add grilled chicken or chickpeas.
- Roast the butternut squash with a pinch of cinnamon for added flavor.
