Ingredients

  • 2 cups mixed winter greens (kale, spinach, arugula)
  • 1/2 cup roasted butternut squash, cubed
  • 1/4 cup pomegranate seeds
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped walnuts
  • 1/4 cup dried cranberries
  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • Salt and pepper to taste


Instructions

  1. Wash and dry the mixed winter greens thoroughly.
  2. Toss the greens with olive oil, balsamic vinegar, salt, and pepper.
