Description
A healthy and delicious vegan version of the classic cheesy broccoli rice casserole. Packed with nutrients and flavor.
Ingredients
- 2 cups cooked brown rice
- 2 cups broccoli florets
- 1 cup shredded vegan cheese
- 1/2 cup unsweetened almond milk
- 2 tbsp nutritional yeast
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 375°F (190°C).
- Steam broccoli florets for 3-4 minutes until tender.
- In a bowl, mix cooked rice, steamed broccoli, vegan cheese, almond milk, nutritional yeast, garlic powder, onion powder, salt, and pepper.
- Transfer mixture to a baking dish.
- Bake for 20 minutes until bubbly and lightly browned.
- Let cool for 5 minutes before serving.
Notes
- Store leftovers in an airtight container for up to 3 days.
- For extra protein, add cooked chickpeas or tofu.
- Use any plant-based milk you prefer.
