Description

A healthy and delicious vegan version of the classic cheesy broccoli rice casserole. Packed with nutrients and flavor.


Ingredients

  • 2 cups cooked brown rice
  • 2 cups broccoli florets
  • 1 cup shredded vegan cheese
  • 1/2 cup unsweetened almond milk
  • 2 tbsp nutritional yeast
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Steam broccoli florets for 3-4 minutes until tender.
  3. In a bowl, mix cooked rice, steamed broccoli, vegan cheese, almond milk, nutritional yeast, garlic powder, onion powder, salt, and pepper.
  4. Transfer mixture to a baking dish.
  5. Bake for 20 minutes until bubbly and lightly browned.
  6. Let cool for 5 minutes before serving.
