Description
A flavorful and healthy vegan casserole with Indian spices and tofu.
Ingredients
- 1 block (14 oz) firm tofu, pressed and crumbled
- 1 cup basmati rice, cooked
- 1 cup diced tomatoes
- 1 cup chopped spinach
- 1/2 cup diced onions
- 2 cloves garlic, minced
- 1 tbsp ginger, grated
- 1 tbsp olive oil
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- 1/2 tsp chili powder
- 1/2 tsp garam masala
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a pan over medium heat.
- Sauté onions, garlic, and ginger until soft.
- Add crumbled tofu and cook for 5 minutes.
- Stir in tomatoes, spinach, and spices. Cook for 3 minutes.
- Mix in cooked rice and transfer to a baking dish.
- Bake for 20 minutes until lightly browned.
- Garnish with fresh cilantro before serving.
Notes
- Press tofu for at least 15 minutes to remove excess water.
- Adjust spice levels to your preference.
- Serve with vegan yogurt or chutney.
