Ingredients
- 2 large sweet potatoes, cut into fries
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp paprika
- 1 avocado, diced
- 1/2 cup black beans, rinsed
- 1/4 cup red onion, finely chopped
- 1/4 cup cilantro, chopped
- 1/4 cup vegan sour cream
- 1 tbsp lime juice
Instructions
- Preheat oven to 425°F.
- Toss sweet potato fries with olive oil, salt, and paprika.
- Spread fries in a single layer on a baking sheet.
- Bake for 25 minutes, flipping halfway.
- While fries bake, mix vegan sour cream with lime juice.
- Once fries are crispy, top with avocado, black beans, red onion, and cilantro.
