Ingredients
- 2 cups diced potatoes
- 1 cup corn kernels
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup coconut milk
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and garlic, sauté until soft.
- Add potatoes, corn, vegetable broth, salt, pepper, and paprika.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Stir in coconut milk and cook for another 5 minutes.
- Blend half the soup for a creamy texture, then mix back in.
- Serve hot.
