Description

Crispy and flavorful vegan fritters made with potatoes and zucchini. Perfect for a healthy snack or side dish.


Ingredients

  • 2 medium potatoes, grated
  • 1 medium zucchini, grated
  • 1/2 cup chickpea flour
  • 1/4 cup chopped fresh parsley
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil


Instructions

  1. Grate the potatoes and zucchini, then squeeze out excess moisture.
  2. In a bowl, mix the grated vegetables with chickpea flour, parsley, garlic powder, onion powder, salt, and pepper.
  3. Heat olive oil in a pan over medium heat.
  4. Form small patties with the mixture and cook for 3-4 minutes per side until golden brown.
  5. Drain on paper towels and serve warm.
