Description
A creamy and delicious vegan queso dip made with cashews as the base. Perfect for parties or snacks.
Ingredients
- 1 cup raw cashews (soaked for 4 hours or boiled for 10 minutes)
- 1/2 cup water
- 2 tbsp nutritional yeast
- 1 tbsp lemon juice
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp turmeric
- 1/4 tsp smoked paprika
- 1/4 cup diced roasted red peppers (optional)
Instructions
- Drain soaked cashews and rinse well.
- Add cashews and water to a blender. Blend until smooth.
- Add nutritional yeast, lemon juice, garlic powder, onion powder, salt, turmeric, and smoked paprika. Blend again.
- If using roasted red peppers, blend briefly to incorporate but leave some texture.
- Transfer to a bowl and serve immediately or warm gently on the stove.
Notes
- Soak cashews overnight for easiest blending.
- Add more water if needed for desired consistency.
- Store leftovers in refrigerator for up to 5 days.
