Ingredients

  • 2 cups cooked white beans
  • 1 cup salsa verde
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup nutritional yeast
  • 1 tbsp olive oil


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a pan and sauté onions, bell pepper, and garlic until soft.
  3. Add cumin, chili powder, salt, and black pepper. Stir well.
  4. Mix in white beans and salsa verde. Cook for 5 minutes.
  5. Transfer the mixture to a baking dish and sprinkle nutritional yeast on top.
  6. Bake for 20-25 minutes until bubbly and slightly browned.
  7. Let cool for 5 minutes before serving.
