A moist and flavorful zucchini bread made with simple, healthy ingredients. Perfect for breakfast or a snack.
Ingredients
- 1 ½ cups grated zucchini (about 1 medium zucchini)
- 1 ½ cups whole wheat flour
- ½ cup almond flour
- 1 tsp baking soda
- 1 tsp cinnamon
- ½ tsp nutmeg
- ÂĽ tsp salt
- ÂĽ cup maple syrup
- ÂĽ cup coconut oil (melted)
- 1 flax egg (1 tbsp ground flaxseed + 3 tbsp water)
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan.
- Prepare flax egg by mixing flaxseed and water. Let sit for 5 minutes.
- In a bowl, mix flours, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, whisk maple syrup, coconut oil, flax egg, and vanilla.
- Fold wet ingredients into dry ingredients. Stir in grated zucchini.
- Pour batter into loaf pan. Bake for 50-55 minutes or until a toothpick comes out clean.
- Let cool before slicing.
Notes
- Store in an airtight container for up to 3 days.
- Freeze slices for longer storage.
- Use a nut-free flour if needed.
