Description
A hearty and nutritious vegetable beef soup packed with protein and vitamins.
Ingredients
- 1 lb beef stew meat, cubed
- 4 cups beef broth
- 2 cups water
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 2 potatoes, cubed
- 1 cup green beans, trimmed
- 1 can diced tomatoes
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
Instructions
- Brown the beef in a large pot over medium heat.
- Add onions, carrots, and celery. Cook for 5 minutes.
- Stir in garlic, salt, pepper, and thyme.
- Pour in beef broth and water. Bring to a boil.
- Add potatoes, green beans, and tomatoes.
- Reduce heat and simmer for 45 minutes.
- Serve hot.
Notes
- Cut vegetables in uniform sizes for even cooking.
- Skim excess fat from the broth if needed.
- Store leftovers in airtight containers for up to 3 days.
