A nutritious and flavorful soup made with fresh vegetables and squash, perfect for a healthy meal.
Ingredients
- 2 cups diced squash
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 tsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, celery, and garlic. Cook until softened.
- Add diced squash and cook for 5 minutes.
- Pour in vegetable broth and bring to a boil.
- Reduce heat and simmer for 20 minutes.
- Season with salt, pepper, and thyme.
- Blend until smooth or leave chunky as preferred.
- Serve hot.
Notes
- You can substitute squash with pumpkin for a different flavor.
