Description
A healthy and flavorful tomato soup made with roasted tomatoes and feta cheese.
Ingredients
- 2 lbs tomatoes
- 1 cup feta cheese
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp dried basil
- 1 cup vegetable broth
Instructions
- Preheat oven to 400°F.
- Toss tomatoes with olive oil, salt, pepper, garlic powder, and basil.
- Roast tomatoes for 30 minutes.
- Blend roasted tomatoes with feta cheese and vegetable broth.
- Heat the blended mixture on the stove for 5 minutes.
- Serve hot.
Notes
- Use ripe tomatoes for best flavor.
- Adjust seasoning to taste.
- Store leftovers in the fridge for up to 3 days.
