Ingredients
- 2 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 lb boneless, skinless chicken breasts, cubed
- 4 cups low-sodium chicken broth
- 1 cup milk
- 1 cup diced ham
- 1 cup shredded Swiss cheese
- 1 tsp dried thyme
- 1/2 tsp black pepper
- 1/4 tsp salt
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, carrots, and celery. Cook for 5 minutes.
- Add chicken and cook until no longer pink.
- Pour in chicken broth and milk. Bring to a simmer.
- Add ham, thyme, pepper, and salt. Simmer for 15 minutes.
- Stir in Swiss cheese until melted.
- Serve hot.
