Description

A nutritious and flavorful wheat berry salad packed with fresh vegetables and a light dressing.


Ingredients

  • 1 cup wheat berries
  • 3 cups water
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper


Instructions

  1. Rinse the wheat berries under cold water.
  2. In a pot, combine wheat berries and water. Bring to a boil.
  3. Reduce heat, cover, and simmer for 45-50 minutes until tender.
  4. Drain any excess water and let the wheat berries cool.
  5. In a large bowl, mix cooled wheat berries, cucumber, bell pepper, red onion, and parsley.
  6. In a small bowl, whisk olive oil, lemon juice, salt, and pepper.
  7. Pour the dressing over the salad and toss to combine.
  8. Serve chilled or at room temperature.

Notes

  • Wheat berries can be cooked ahead and stored in the fridge for up to 3 days.
  • Add feta cheese or avocado for extra flavor.
