Description
A nutritious and flavorful wheat berry salad packed with fresh vegetables and a light dressing.
Ingredients
- 1 cup wheat berries
- 3 cups water
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1/2 red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Rinse the wheat berries under cold water.
- In a pot, combine wheat berries and water. Bring to a boil.
- Reduce heat, cover, and simmer for 45-50 minutes until tender.
- Drain any excess water and let the wheat berries cool.
- In a large bowl, mix cooled wheat berries, cucumber, bell pepper, red onion, and parsley.
- In a small bowl, whisk olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Serve chilled or at room temperature.
Notes
- Wheat berries can be cooked ahead and stored in the fridge for up to 3 days.
- Add feta cheese or avocado for extra flavor.
- Adjust salt and pepper to taste.
